2 cups zucchini, grated with rind
2 cups sugar
1 cup cooking oil
1/4 tsp. pepper
1 tsp. salt
2 tsp. baking soda
2 tsp. vanilla
2 tsp. cinnamon
2 cups flour
1 cup raisins and nuts (optional)
Beat eggs, sugar, oil and squash together. Add dry ingredients to egg mixture. Add vanilla and nuts. Bake in greased and floured loaf pans at 350˚ for 1 hour.
Makes 2 loaves
